Grilled turbot with ginger and soy sauce

Ingredients: - 1 turbot - 1 inch piece of ginger - 2 tablespoons soy sauce - 1 tablespoon vegetable oil - 2 cloves garlic, chopped - 1/4 teaspoon red pepper flakes

Instructions:

  1. Preheat grill to medium high heat.
  2. Remove scales and innards from the turbot. Rinse fish and pat dry. Peel ginger and chop into thin strips. In a small bowl, mix together soy sauce, vegetable oil, garlic, and red pepper flakes.
  3. Place the fish on the grill and brush with the soy sauce mixture. Grill for 3 to 4 minutes per side, or until cooked through. Serve with ginger strips on top.

Grilled turbot with lemon and herb butter

Ingredients

1 turbot or other firm white fish, about 1.5 kg/3 lb

zest and juice of 2 lemons

4 tbsp (60 g) unsalted butter, at room temperature

2 tbsp chopped fresh parsley

2 tbsp chopped fresh dill

2 tsp chopped fresh thyme

salt and black pepper

Preheat the grill to medium-high heat. Rinse the fish and pat dry with paper towels. Cut 3 diagonal slashes in each side of the fish. In a small bowl, mix together the lemon zest and juice, butter, herbs, and salt and pepper to taste. Spread the butter mixture over the fish and place on the grill. Grill for 10-12 minutes per side, until cooked through. Serve hot with lemon wedges.

Grilled turbot wrapped in bacon

This recipe is for grilled turbot wrapped in bacon. 1. Preheat your grill to medium-high heat. 2. Cut the bacon into thirds, and wrap each piece of bacon around a slice of turbot. Secure the bacon with a toothpick. 3. Grill the turbot for 3-5 minutes per side, or until the bacon is crispy and the turbot is cooked through. 4. Serve immediately with your choice of sides.

Teriyaki grilled turbot

This dish is one of my favourites, it is a little bit more complicated than some of the other dishes I have shared but it is definitely worth it.

Ingredients: 1 turbot fillet 4 tbsp soy sauce 4 tbsp mirin 4 tbsp sake 1 tbsp sugar 1 red pepper, seeded and cut into thin slices 1 green pepper, seeded and cut into thin slices 2 garlic cloves, minced 3cm piece fresh ginger, peeled and minced 2 spring onions, thinly sliced on the diagonal Method: 1) In a shallow dish mix together the soy sauce, mirin, sake and sugar. Cut the turbot in half widthways and then place in the marinade. Turn over a few times to coat well then leave to soak for at least 30 minutes. 2) Preheat your grill or barbecue to medium-high heat. Thread the red pepper, green pepper and garlic cloves onto skewers (if using wooden skewers soak them in water for 30 minutes before using). Grill for 8-10 minutes until slightly charred around the edges, remove from skewers and set aside. 3) Grill or barbecue the turbot for 6-8 minutes each side until cooked through. Remove from heat and thinly slice on an angle. 4) Serve the turbot on plates with some grilled peppers and spring onions scattered over top. Enjoy!

Mediterranean grilled turbot
