Ingredients: 8-10 ounces turbot or other firm whitefish fillets, skin removed 1/4 cup extra-virgin olive oil, divided 1/4 cup finely diced red onion 1/4 cup dry white wine 2 tablespoons chopped fresh parsley 1 tablespoon fresh lemon juice 1 teaspoon capers, drained and chopped 1 garlic clove, minced Kosher salt and freshly ground black pepper to taste 6 tablespoons all-purpose flour 2 large eggs, beaten 3/4 cup dried bread crumbs 2 tablespoons butter, melted

Instructions: 1. Preheat oven to 400 degrees F (200 degrees C). 2. Grease a baking sheet with about 1 tablespoon of oil. 3. Cut the fish into 8-10 equal portions. Season both sides of each piece of fish with salt and pepper. Place the flour in a shallow dish. In another shallow dish, beat together the eggs and water. In a third shallow dish, mix together the bread crumbs and capers. 4. Dredge each piece of fish in the flour until well coated, then dip into the egg mixture until coated, then coat with the bread crumb mixture. Place the fish on the prepared baking sheet. Drizzle any remaining egg mixture over top of the fish pieces. Sprinkle with any remaining bread crumbs if desired. Bake for 12 minutes in the preheated oven, or until the coating is golden brown and the fish flakes easily when tested with a fork.

  1. Meanwhile, heat olive oil in a small skillet over medium heat. Add onions and cook until translucent, about 5 minutes. Stir in wine and simmer for 2 minutes until reduced by half.
